Owen’s Clafoutis Recipe

Ingredients

  • 2 Tbsp. unsalted butter

  • 3 large eggs

  • 1 cup of whole milk or milk substitute 

  • 1 tsp of lemon zest

  • 1 tsp of vanilla extract

  • ⅓ cup of granulated sugar

  • ½ cup of All-Purpose flour

  • 2 cups of halved or diced peaches, apricots, berries, mango, or any fruit of choice.

Preparation

  1. Preheat oven to 350°F.

  2. While the oven heats up, place a spoonful of butter in a 2 -3 qt shallow baking dish or medium 10” ovenproof skillet. and let it melt; it usually takes 5 minutes. 

  3. While waiting for the butter to melt and the oven to preheat, blend the eggs, milk, lemon zest, salt, vanilla, and granulated sugar in a blender until frothy (2-3 minutes), then add flour and blend to combine.

  4. Pour the batter onto the hot baking dish directly into the center.

  5. Add fruit and arrange it evenly throughout and add it to the oven.

  6. Bake until the clafoutis top is puffed and lightly brown, usually 30-35 minutes.

  7. Remove from oven and set it aside to cool.

  8. Sift powdered sugar over the top and serve warm.
